The Science of Olive Oil:

There are actually three distinct and important ingredients derived from the olive tree: Olive Oil, Olive Leaf Extract, and Squalene (derived from the pit). For now, we will focus on Olive Oil. An important feature to olive oil is its ability to easily combine with water allowing for development of a wide range of rich, healthy and effective products. It's also important to note that we use only 100% Extra Virgin Olive Oil - the richest form of the oil. It is significantly higher in nutrient value than all other processed forms and is an excellent source of vitamins A, E and K.

Olive oil is abundant in fatty acids, and contains, Oleic acid, Linoleic acid, (omega 6) and Linolenic acid, (omega 3). Yes, these same great things you may have been reading about lately. Olive oil is also extremely rich in polyphenols (a family of antioxidants that occur naturally in plants) containing as much as 5 mg per every 10 grams of oil. Many nut and seed oils have none at all. Extra Virgin Olive Oil contains the highest level of polyphenols, 10 to 15 times the level in refined Olive Oil.

Polyphenols, very gentle yet highly effective antioxidants, protect our skin and body from the cellular damage caused by free radicals. In fact they neutralize free radicals. Formation of free radicals is a normal process within our body, but of particular importance is that free radical damage accumulates with age. Without antioxidants free radical production becomes excessive.
